GAH! I have a hippycrap CD (also known as 'relaxation music') on to stop me faffing too much while working on my critical analysis - and it's a RAINFALL one, and it's making me NEED A WEE. That's no bloody good, is it?

I've experimented with pouring the whole of the rest of the mix flat into the pan, and am making a sweetcorn blob pancake. I'll let you know how it works out. I just flipped it successfully.

A little bit of gluten-free gravy mix because it's basically flour and I really did have a comedy small amount left. But apart from that no, sweetcorn, egg, soya milk, flour and salt.

Batter without eggs comes out scarily limp and rubbish, I've had to do it when making vegan blobs. Some people use just the egg yolks, I haven't tried that yet. There was quite enough soy sauce on the rice I had with it, but it's a thought. I have balsamic vinegar, didn't even occur to me that it might belong in batter...

If you need to make vegan pancakes, use self-raising flour instead of plain, and soy yogurt + water mixed roughly 50:50. You'd THINK that soy yogurt + water would be exactly the same as using soy milk, but it isn't - the acid in the yogurt reacts with the raising agents in the self-raising flour to make the whole thing rise up thick and fluffy :)
