Tonight I rock.

I have finally got completely sick of the amount of money I spend on lunches for work, and the amount of calories I am consuming therewith. I went to the Co-Op after work, therefore, and bought a large pile of vegetables - carrots, celery, spring onions, plus a tin of sweetcorn, another of red kidney beans, and assorted other handy items. Thanks to the marvellous Liz, our kitchen is spotless and organised, so after a few hours of lazing about I was able to go downstairs, locate a pan, fine colander, and set of plastic boxes, and make piles of salads. I have made a very mini box (about the size of my hand) of carrot rappé with lemon juice (fake, sadly - the Co-Op was lemonless) and black pepper; a medium box (a lunch-sized serving) of potato salad with reduced-fat mayonnaise, celery, spring onion and black pepper, and a huuuuuuuuuuge box (at least two if not three good-sized servings) of pasta salad - mini conchiglie with peas, sweetcorn, tuna, sping onion and a little mayonnaise. I had a couple of teaspoonsful of the latter and WOW. Best pasta salad I have made for ages. I love peas so much.

We also have fruit and Petits Filous so we really can have sensible, tasty, healthy lunches. I think we're sorted for the next couple of days - on Wednesday night I will probably make tuna and bean salad, and perhaps a smoked salmon pasta salad.

I have also washed up all the utensils as I went along, so the kitchen is still spotless. I am very chirpy. I'm now drinking milk - I have a Brunch Bar right by me, but the pasta salad was so deliciously savoury it has spoilt me for chocolatey things.

It's my turn to cook tonight anyway, as Robert made fantastic slow-cooker stew yesterday. So I will be off making something else interesting within the next half-hour. Not sure what yet, though.

Sounds far more amazingly organised (and tasty!) than I managed when it came to lunch!

It is a great way to save lots of money too - you never really pick up on how much you throw away on buying lunches until you stop and think about it...

Clean kitchens rock! I've been keeping the one here reasonably clean and it's so much more fun to cook in. What's carrot rappé?

(I admit that much of the motivation for keeping the kitchen clean has been that I've started wanting to take photos of my cooking, and non-manky backgrounds make the photos turn out much better.)

Yum, packed lunches.

Mine for tomorrow has a mushroom pate sandwich, a tomato pate sandwich, a cinnamon and raisin bagel, some Mini Cheddars, five cherry tomatoes and a banana.

I should try making potato salad sometime, that's a good plan.

Is it sort of like fine julienne then? ie, cut with a knife? Or do you grate it in some way different from the way you grate cheese?
