I think I might make potato salad tomorrow. I've got new potatoes and mayonnaise. If you were me, what else would you add?

I'm not sure what I would add were I you, but were I me I would put in a little mustard, some vinegar, spring onions, salt, pepper and diced celery.

I'd leave out the mayonnaise and add sliced green olives and thinly-sliced red onion (the slenderness of the slices being more important than the redness of the onion), then dress it with a fairly mustardy vinaigrette.

If determined to include mayonnaise, I think I might try to incorporate garlic somehow.

Further to this comment: it's the oil that makes potato salad work. Mayonnaise is oil and egg, works fine too, but isn't necessary as such. Olives and vinaigrette will also work provided you make your vinaigrette oily enough. Just potato and flavourings will not work!

As to the flavourings themselves, most things will work, it just depends what you want your potato salad to taste of. (In my case probably thyme and lemon juice.)

Seriously, cubes of bacon, fried in olive oil, small pieces of red pepper, spring onion... that should do it :)

Either chives (or preferably wild garlic leaves) + ground black pepper + a bit of lemon juice, or smoked paprika + finely-chopped peppers, or mustard + lumps of cheddar + finely-chopped onion/spring onion.

I love potato salad just as it is with nothing else in. A bit of seasoning, and maybe a crushed garlic clove if I was feeling adventurous.

I would mix the mayonnaise with vinegar (pref red wine or raspberry, so it goes beautifully pink), then sprinkle chopped dill into the dressed spuds.

I would add -mayonnaise, as mayonnaise is *evil*.

I'd probably add some finely sliced spring onions, plus some tuna to go with it.
